Ratatouille



For 5 servings: 6 Tomatoes already peeled

2 small Aubergines or 1 big

2 Pepper bells red and green

2 to 3 Courgettes depending on the size

4 small Onions

2 cloves Garlic

2 tablespoons olive oil

3 branch of Thyme fresh

2 Bay leaves dried Salt and Pepper


1. Cut the peeled tomatoes in small squares. 2. Cut the aubergines, courgettes, pepper and onions in slices. 3. Put the 1.5 tablespoons of olive oil in a pan. When hot, put the onion and peppers to cook. When they are tender, add the garlic, thyme and bay leaves, salt and pepper


4. Cook for 45 min. 5 Cook separately courgettes and aubergines for 15 min. 6 Add in the pan tomatoes, courgettes and aubergines and mix. 7 Leave it to cook slowly all together for 15 min or more. The ratatouille can be prepare in big quantity and frozen in small containers. To reheat simply put in a pan with a little bit of olive oil.
